◎ What is the difference between dried fruit and candied fruit?
The candied fruit must be pickled for a long time, and the sugar and the pigment are very high. Even adding a variety of chemical flavors and preservatives is very different from simply dried fruit.
◎ No concept of addition
The Benshan people want to seek a balance between science and art. They believe that there is no added materialism: no coloring, no preservatives, no nameless ingredients.
Actually, we use dried fruit as a food. It is unimaginable that we do not add salt and sugar to our ingredients. Add salt to dehydrate and remove astringent, so there is residual trace salt; add sugar to balance acidity and soften fiber. It can also keep the natural color longer, and it is more durable and non-deteriorating.
◎ There are four small categories of dry processing fruit
The earliest is the candied fruit, and everything has been added. After going to the factory to understand the process, many people would not dare to eat it.
The second type is the general commercial dried fruit, which is added with a lot of pigments and fragrances and antiseptics, as well as excess sugar, which is common at airports, food exhibitions and night markets.
The third category is the fruit of the mountain, adding only the minimum and most necessary salt and sugar, and some species will add a small amount of pure brewed plum powder or plum juice to increase the acid aroma.
The most advanced and expensive is the 100% dried fruit, but I will choose to eat the fruit more moist and refreshing.
◎ Dried Fruit Process:
All are from the orchards in central and southern Taiwan. They are mainly baked in electric ovens at low temperatures. They can maintain their flavor and nourishment between 45 and 50 degrees Celsius. If sun exposure is apt to have bacteria, mosquitoes and a variety of dust, and must rely on the weather, but Taiwan is too wet, food exposure can easily deteriorate or be contaminated, and 50 years ago is no longer the same language.
In addition, the dried fruit must also be judged by the naked eye and hand-processed to achieve the most perfect ripeness selection, fiber direction, size and taste of the flesh, so the master chef's craft has a great influence.
Q: Only the central and southern plains are designated as the origin. Why?
A: Because this is the fact, not the common marketing term (such as Guanmiao pineapples).
Our fruits are selected from the indigenous fruits of the Central and South, and will select the best areas for the season to find the most suitable fruit and then processing. We differ from traditional marketing methods in that pineapples must be used in Guanmiao (and in fact this is not inevitable; Taiwan is so small, and these differences are all amplified by local marketing). Eighty percent of our products are only bananas and guava. It is specifically adopted by Nantou to gather mountain bananas and swallow nest guava. However, in fact, the similarity of climate and soil quality in various parts of south-central Taiwan is very high. The difference in fruit quality is mainly due to personal skills and intentions. If we only want to blindly adopt a single fruit in a specific area, several will face the problem of imbalance in production and sales. .
