【About the chef】
Once More, One Master Chef.
Jacky, the head of R&D, worked as a sous chef at the two-Michelin-starred restaurant Houbouchon in Hong Kong in 2014 (now a three-Michelin-starred restaurant); and in 2016, he went to Japan to apprentice with Yukio Konishi, the famous authority on Spanish cuisine in Osaka. After returning to Taiwan, Jacky devoted himself to entrepreneurship, combining the techniques he learned overseas with local ingredients in Taiwan, and successfully opened his own "Spanish Farm Cuisine" restaurant.
In less than a year and a half, Jacky not only successfully opened the store, but was also visited by the well-known food program "Food Gamer" at the time; he was also recognized and invited by Singapore's boutique tea restaurant group TWG to open a total of 48 branches for TWG in the Asia-Pacific region. , and went to Singapore to serve as the dessert R&D director of the headquarters.
After returning to Taiwan in 2021, Jacky has devoted himself wholeheartedly to the field of baking, and is committed to bringing all kinds of surprises to the handmade biscuits and desserts market through the most sincere craftsmanship gained over the years.

Once More Guolai Studio was founded in November 2022. It was co-founded by two Taiwanese returnees who have lived in Singapore and local workers in Yilan. We hope to bring the handmade biscuits and desserts to the market through the most sincere craftsmanship. Come to all kinds of surprises.
The brand appearance from zero to existing is all the result of the hard work of the team; we are determined to "hope to shine in Taiwan's local dessert field" and moisturize the taste buds of your tongue with the simplest and most exquisite biscuits.
Once more unto the breach, dear friends, once more – Henry V
Shakespeare's works describe King Henry V's heroic battle leading the British army in the famous Battle of Agincourt, and the name of the Once More store is named after that profound soliloquy that has been passed down through the ages. In addition, the reason why the store was named Once More also represents the uniqueness of the brand and the determination to "get it right at once" for this business venture. We want to convey: "Perhaps, many things feel very strange when you try them for the first time; but if you move forward 'again', surprising success is just around the corner."

We hope to create the most unique taste so that each cookie can have its own name. The appearance may not be called gorgeous, but the sense of smell and taste are the best proof: the biscuits themselves are full of aroma, and when you eat them, you can have a solid, silky and sweet experience, especially the baking method of interweaving exotic spices. It brings the taster a feeling that is captured on the tip of the tongue.
Currently, the brand launches six types of specialty biscuits: Moroccan, Tea Earl Gray, Magic Lamp, Homecoming, Sea Salt Caramel, and Black and White. The names are poetic and distinctive, just like the biscuits themselves are smooth and sweet. The story behind the naming comes from the discussions and ideas of the brand team. We insist that every cookie has its own story: and the process of baking with care is how we weave this story.
